I’ve been a vegetarian chef for 25 years, both in restaurants and at home. I started cooking back when vegetarian and vegan diets were for the hippies, and plant-based, keto, and everything else was still a figment of someone’s imagination.

I maintain my calm and peace each day by following the simple diet and lifestyle habits of Ayurveda, which is based on 5,000 years of wisdom about healthy living, and how to live a life of balance. Ayurveda means the “science of life.” It truly is an ancient science.
I got into cooking through selfish interests. I was looking for a way to ease my stress and anxiety. It worked. Food is truly my medicine. Any illness, even one that’s life-threatening, can be overcome with Ayurveda’s diet and lifestyle practices. I know from personal experience.
I have unshakable faith in the power of any individual to heal. I also have the belief that food preparation and cooking is critical to this healing. Eating what nature provides is how we’ve always lived, and it is at our own peril that we ignore this, as we can see by the epidemic of modern diseases. We need to reclaim our connection to nature, and to the divine.
The key is to reclaim the knowledge that food, herbs, and spices are indeed our medicine. Because food that’s manufactured in a lab—with parts extracted from the whole—deeply disturbs our inner intelligence, and keeps us separated from our potential. It also creates the conditions for disease to take hold.
