Eating a dessert that is made with wholesome ingredients that contain nutrition an health benefits makes you feel very satisfied(due to sweet taste), but still balanced (due to the real nutrition). Just remember to enjoy them in moderation.
1/2cupsunflower oilor any other light vegetable oil
2tablespoonplant-based milkor regular milk
1tablespoonvanilla
Instructions
Method
Preheat the oven to 350 degrees Fahrenheit.
Combine the dry ingredients in a bowl and mix well.
Combine the wet ingredients in a bowl and mix well.
Add the wet ingredients to the dry ingredients and mix with a spoon. Grease an 8x10-inch cookie pan. Spread brownie mixture evenly, and bake for 30-35 minutes. If you use a larger tray, check the brownies earlier. You will know the brownies are ready when the middle has lost its sheen and is no longer runny, and the edges are slightly browned. Enjoy!
Notes
Baking tray
An 8x10-inch baking tray will give you about a 1-inch thick brownie. A little smaller or larger will also work, but it will give you a different thickness and you will need to adjust the cooking time.I suggest fitting a parchment paper into the baking tray first to prevent sticking. You may have noticed that in my photos. What we did is to scoop the stuck bits from the tray up with a spatula, and we enjoyed that too.
Oat flour
You can make your own oat flour by blending oat flakes in a food processor or blender.
Cacao powder
I have called for cacao powder because it is unprocessed, raw, and closer to nature. It is more bitter though. If you have any form of cocoa power, you can substitute with it.
Chocolate chips
If vegan is important to you, then buy vegan. Otherwise, just choose the best quality chocolate you can find.
Pumpkin puree
If you use the canned, you can use up the extra from the can in a soup, stock, or broth. The great thing about pumpkin is that it isn’t too sweet, and again has a bit of bitter flavor to it, so it lends itself well to savory, as well as sweet items. You could also substitute with a homemade puree, and even use butternut or buttercup squash. Simply steam the squash, then puree in a food processor until extra smooth.* Recipe slightly modified from: https://kripalu.org/resources/kripalu-recipe-vegan-chocolate-brownies
