Wash and coarsely chop cilantro. Add to a mini chopper or blender along with the remaining ingredients, and blend until coarsely processed.
Store in a glass jar in the fridge for up to 5 days.
About the coconut
The coconut in this recipe is entirely optional. Favor coconut in the summer and in warmer weather for its cooling qualities. In colder seasons leave it out.
About the date or honey
Many people enjoy the sweeter taste in cilantro chutney, but it is optional - particularly if you include the coconut.There is also a medicinal effect A date will soften up the detoxifying effect of the cilantro, while the honey will increase it slightly.

Have a tablespoon (or more) cilantro chutney with any meal as a flavorful digestive aid.Wonderful with Indian food, rice, fish, chicken, potatoes, as a sandwich spread, or part of a savory breakfast with eggs.
