Equipment

  • medium mixing bowl
  • fine sieve

Ingredients

for the flavor

  • 1-2 teaspoons ginger finely chopped
  • 1-2 teaspoons garlic finely chopped
  • 1 tablespoons green onion chopped
  • 2 1/2 tablespoons sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons Chinese cooking wine or mirin
  • 1 tablespoon mushroom flavored dark soy sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil

to add

  • 1 1/2 cup boiling hot chicken or vegetable stock

Instructions

  • Place all ingredients for the flavor in a medium mixing bowl. Heat stock and pour it over the ingredients. Soak for 30 minutes, then strain through a sieve and discard the rough bits.

Notes

Store in the fridge for up to 1 week, or freeze for future use.
