Recipe for Chinese Brown ‘Mother’ Sauce

Equipment
- medium mixing bowl
- fine sieve
Ingredients
for the flavor
- 1-2 teaspoons ginger finely chopped
- 1-2 teaspoons garlic finely chopped
- 1 tablespoons green onion chopped
- 2 1/2 tablespoons sugar
- 3 tablespoons soy sauce
- 2 tablespoons Chinese cooking wine or mirin
- 1 tablespoon mushroom flavored dark soy sauce
- 1 tablespoon hoisin sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
to add
- 1 1/2 cup boiling hot chicken or vegetable stock
Instructions
- Place all ingredients for the flavor in a medium mixing bowl. Heat stock and pour it over the ingredients. Soak for 30 minutes, then strain through a sieve and discard the rough bits.
Notes
Store in the fridge for up to 1 week, or freeze for future use.
