Equipment

Ingredients

  • 3-6 whole sweet potatoes (orange type)
  • olive oil to cover the potatoes

Optional toppings

  • butter, ghee, or olive oil
  • sour cream or plain yogurt
  • fresh lemon or lime
  • salt to taste
  • cinnamon, black pepper, or cardamom
  • fresh herbs, such as cilantro, basil, parsley, green onions, etc.

Instructions

  • Place parchment on a roasting tray and turn on the oven at 375 degrees Fahrenheit. Wash 3-6 whole sweet potatoes, and dry them. Pierce skins a few times with a fork and place on the tray. Drizzle olive oil onto the potatoes and use your hands to coat the skins. Roast until the juices start to escape and caramelize on the tray (about 30-50min)
  • Enjoy with butter, ghee or olive oil, fresh lemon or lime, salt, and your choice of spices like black pepper, cinnamon, cardamom. 
    You could also have chopped green onions, sour cream. 

Notes

Turn this into a meal

A baked sweetie with soup is a good combination. 

Enjoy as a vegetable side

You can also use your extra cooked sweeties as a snack, or a quick vegetable side. 
Chop sweet potatoes, then quick sauté in ghee. Sizzle in a few pinches of spices. Coriander powder is nice. Again, finish with lemon/lime and salt.

I love sweet potatoes with pumpkin seeds, jack cheese, and chipotle/chilis/garlic to assist with digestion. 
Have with a side dip of sour cream or yogurt with lime and black pepper.
