Ayurvedic Green Smoothie

Full of fiber from fruits and vegetables, this Ayurvedic smoothie isn’t overly sweet, and it’s well balanced in terms of overall flavor and doshic effect. 

The fruits used are green apple, red apple, pear, orange, and fresh lime juice, while the vegetables include carrots, celery, and cilantro. 

Dosha effects

A smoothie like this one made with sweet, juicy fruit is most supportive for Pitta dosha due to its inherent cooling qualities.

Vata and Kapha are pacified due to the additional warmth of the lime and ginger.

This is such a pleasant smoothie. You feel like you are chewing your drink a little due to the fact that it’s blended, (versus juiced), so the fiber remains.

The flavor

I enjoyed the flavor of this smoothie alot, but my husband asked “what the weird taste” was.

That weird taste was the celery, but don’t knock it, because it’s the exact ingredient that balances the sweetness of the other ingredients. It’s also highly alkalizing. 

If you are sensitive to sugar, or are avoiding sugar in general, you can skip the carrots.

This drink will rehydrate, soothe, and even detox some through the cilantro. According to Vaidya Mishra, “it is a perfect summer juice blend.”

Variations

Replace one of the apples with 1/2 cup grapes or blueberries. 

If you are missing an ingredient, just leave it out, or use a similar replacement.

Portions and storage  

This recipe will make about 36 fluid ounces of juice, or three 12-ounce servings. 

Store juice covered in the fridge for 1-2 days.

Ingredients

the fruits

  • 1 red apple cored
  • 1 green apple cored
  • 1 pear cored
  • 1 orange peeled
  • 1 lime freshly squeezed
  • 1 cup water

the vegetables

  • 3-4 cups leafy greens chopped
  • 1 1/2 cups carrots chopped
  • 1 cup celery chopped
  • handful cilantro (sub with parsley or arugula)
  • 1 teaspoon ginger chopped (sub with ginger pickle)
  • pinch salt

Instructions

  • Add all ingredients to a high speed blender and blend on medium-high until smooth. If you are missing an ingredient, just leave it out, or use a similar replacement.

    Hello. I love green juices and smoothies. Hieever after learning more about ayurveda and food combinations i find myself excited and yet frustrated sometimes with all the rules. As i learn more i realize not everything need be off my plate but perhaps certain this are best to eat sparingly or better prepared another way to better help myself. I did learn that fruits and vegetables are not to be combined. The when it comes to fruit. Eat it alone or leave it alone. So I get fustrated there. What about this juice/smoothie. Because it is remedied with the ginger and lime does that help digest it better? What about lassi? I have seen “ayurvedic lassi” still using fruit with yogurt? I was thinking maybe coconut yogurt and coconut milk amd or water for such things as lassi, smoothies, and juice like drinks might be a good or better ingredient choice. Pls do share your thoughts here if you have time. Thx 🙏

      Hi Christina,
      I appreciate that Ayurveda isn’t always fully explained. Leafy greens, which includes celery can combine with certain fruits. In this case the apples, orange and lime all include the sour taste, so they aren’t overly sweet, and come across as more savory. Carrots, believe it or not, have a degree of pungency, and so act as a digestive stimulant. The important thing in Ayurveda is always the combinations. And Yes! ginger and lime help here. Fruit blended with yogurt is not a great combination for lassi, and mango lassi is NOT Ayurvedic. If the fruit content is low, and water is added so it isn’t too thick, and maybe a bit of strawberry with the sour taste to combine with the sour in yogurt, it could work in certain situations.
